Crockpot Beef Tips and Veggies Over Rice

Tasty crockpot recipe for beef tips using lots of fresh veggies to add flavor. This is a clean version without the use of canned or dried soup mixes, gravy mixes or other ingredients including MSG, preservatives and high fructose corn syrup. This tasty beef entree is so quick and easy since it's made in the crockpot. This wonderful comfort food recipe is gluten free.

1 1/2 lbs. eye of round sirloin steaks cut in strips 1/2 to 3/4 cup gluten free flour 8 oz. fresh mushrooms sliced 2 large onions sliced 2 leeks green top removed, sliced or diced 1 red pepper cut in strips 1 cup baby carrots petite baby carrots, preferred 1 cup green beans ends cut off 1 tsp. sea salt or kosher salt 1/2 tsp. pepper 32 oz. container beef broth diced green onions and/or fresh chopped parsley for garnish brown rice soaked at least one hour
Cut steaks into strips and dredge in flour.
Spray crockpot with olive oil cooking spray.
Add dredged, uncooked, steak strips, mushrooms, onions, leeks, baby carrots, salt, pepper, and beef broth.
Cover with lid and cook on high approximately 2 hours.
Add red pepper strips and green beans and cook an additional 2 hours.
Serve over rice.
Garnish with green onions or parsley (or both).
NOTE: If your family prefers a meatier dish, increase the amount of beef to 2 ½ to 3 lbs.
