Ingredients

  • 6 cups turkey broth
  • 1 leek green top removed, sliced
  • 1 medium onion chopped
  • 1 yellow bell pepper chopped (or any other color)
  • 2 ribs celery diced
  • 2 cloves garlic minced
  • 3 small carrots peeled, sliced
  • 1 cup frozen peas thawed
  • 4 cups turkey chopped
  • 2 tsp. pink Himalayan sea salt
  • 3/4 tsp. pepper (see note)
  • 1 tsp. thyme
  • 1 tsp. rosemary
  • 1 tbsp. parsley
  • 8 oz. Ronzoni gluten free thin spaghetti noodles broken in half or thirds

Instructions

  • Pour broth into crockpot.
  • Add turkey, leek, onions, bell pepper, celery, garlic, carrots and seasonings.
  • Cook on low heat for about 4-5 hours.
  • Add noodles and cook about 30 minutes or until noodles are tender.
  • Add peas and cook an additional 15 minutes.
  • Check seasonings.
  • Add more if desired.

Notes

NOTE: I love a lot of pepper in my soups, but if you’re not fond of it, I recommend scaling back to about 1/3 to ½ tsp. pepper.
NOTE: The noodles will absorb a lot of liquid. You may have to thin the soup with additional water or broth, especially after the soup sits out or refrigeration.
NOTE: Preparation time does not include time required to cook off a turkey carcass and debone meat.
