Crunchy Peanut Butter Cookies

These mouthwatering Peanut Butter Cookies use crunchy peanut butter for a nutty, chunky texture that's absolutely heavenly and one your family is sure to enjoy. Marvelous for tailgating parties, potlucks and Christmas Cookie Exchanges.

1 cup brown sugar 1 cup sugar 1 cup Jiffy extra crunchy peanut butter 3/4 cup butter I use unsalted butter 2 large eggs 1 tsp. vanilla extract 1/4 tsp. salt I use sea salt 1 tsp. baking soda 2 tbsp. hot water 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
Mix brown sugar, sugar, peanut butter, butter and eggs with an electric mixer until smooth.
Add vanilla, salt, baking soda and hot water and mix again until well blended.
Stir in flour with a wooden spoon until combined.
Drop with an ice cream scoop or large tablespoon onto cookie sheets that have been sprayed with cooking spray.
Bake at 375° about 12-15 minutes or until done.
NOTE: I made whopper sized cookies so these took longer to bake. If you're making smaller cookies you will need to adjust the length of baking time.
