A luscious date filling is sandwiched between a wonderful oatmeal streusel crust and topping in these tasty treats. They're rich, sweet and sensational! Terrific for holiday and Christmas baking and for Christmas Cookie Exchanges.

1 8x8" glass baking dish
1 mixing bowl
1 wooden spoon

1 sauce pan
1 potato masher
1 spatula
1 cup dates cut in pieces 1/4 cup water 1/2 cup granulated sugar 1 tsp. vanilla extract 1/4 cup Crisco shortening 1/2 cup unsalted butter 1/2 cup light brown sugar packed 1 cup UNBLEACHED all-purpose flour bleached flour toughens baked goods 1 tsp. baking soda 1 1/2 cups old-fashioned oatmeal
Cook dates, water, sugar and vanilla until soft; mash dates down with a potato masher while cooking.
Mix remaining ingredients until crumbly.
Line bottom of greased 8x8” pan with ½ the crumbly mixture.
Gently spread date filling on top.
Spread filling to about 1/8” from the edge, otherwise it will be hard to remove from pan because the filling adheres to the pan.
Top with remaining flour mixture and bake at 325° for 25 minutes.
Cut into bars when cool.
NOTE: Double this recipe for 9x13” pan.
NOTE: I recommend refrigerating the cookies after baking to make cutting easier.
