Fiesta Corn Salad

Enjoy this zesty Fiesta Corn Salad for any potluck, Backyard Barbecue, Family Reunion or company dinner. If you enjoy outdoor eating, this is a fantastic easy-peasy recipe that's terrific for devouring on the back patio whenever you heat up the grill. It includes canned corn, tomatoes, cucumber, celery, bell peppers and Wishbone Low-Fat Italian Dressing. It's a gluten free, vegan side dish that's sure to please even finicky eaters.

1 large mixing bowl
1 serving dish
1 wooden spoon
1 sharp knife
1 cutting board
1 colander to drain corn
measuring cups
measuring spoons
16 oz. can whole kernel corn drained (or 2 ears fresh corn, blanched before using) 1 cup fresh tomato diced 1 cup cucumber diced 1/2 cup celery diced 1/2 medium red bell pepper diced 1/2 medium green bell pepper diced 2 medium green onions diced 1/2 cup Fat-Free Italian Dressing salt and pepper to taste 1 tsp. fresh oregano minced, or more, if desired 1 tsp. fresh basil minced, or more, if desired 1 tsp. fresh dill weed minced, or more, if desired
Combine corn, tomatoes, cucumber, celery, bell peppers and green onions in a salad bowl.
Drizzle with Fat Free Italian Dressing or olive oil and balsamic vinegar.
Add salt and pepper to taste.
Sprinkle fresh herbs over top.
Stir well to combine.
Cover and refrigerate salad for several hours before serving.
Sprinkle with additional fresh basil, oregano and dill weed before serving, if desired.
