Enjoy this zesty Fiesta Corn Salad for any potluck, Backyard Barbecue, Family Reunion or company dinner. If you enjoy outdoor eating, this is a fantastic easy-peasy recipe that's terrific for devouring on the back patio whenever you heat up the grill. It includes canned corn, tomatoes, cucumber, celery, bell peppers and Wishbone Low-Fat Italian Dressing. It's a gluten free, vegan side dish that's sure to please even finicky eaters.

Equipment

  • 1 large mixing bowl
  • 1 serving dish
  • 1 wooden spoon
  • 1 sharp knife
  • 1 cutting board
  • 1 colander to drain corn
  • measuring cups
  • measuring spoons

Ingredients
  

  • 16 oz. can whole kernel corn drained (or 2 ears fresh corn, blanched before using)
  • 1 cup fresh tomato diced
  • 1 cup cucumber diced
  • 1/2 cup celery diced
  • 1/2 medium red bell pepper diced
  • 1/2 medium green bell pepper diced
  • 2 medium green onions diced
  • 1/2 cup Fat-Free Italian Dressing
  • salt and pepper to taste
  • 1 tsp. fresh oregano minced, or more, if desired
  • 1 tsp. fresh basil minced, or more, if desired
  • 1 tsp. fresh dill weed minced, or more, if desired

Instructions
 

  • Combine corn, tomatoes, cucumber, celery, bell peppers and green onions in a salad bowl.
  • Drizzle with Fat Free Italian Dressing or olive oil and balsamic vinegar.
  • Add salt and pepper to taste.
  • Sprinkle fresh herbs over top.
  • Stir well to combine.
  • Cover and refrigerate salad for several hours before serving. 
  • Sprinkle with additional fresh basil, oregano and dill weed before serving, if desired.
