Four-Pasta Beef Bake

Tasty pasta dish actually makes 2 large casseroles. This recipe is filled with four kinds of pasta, spaghetti sauce, ground beef and topped with mozzarella cheese. It's kid-friendly and terrific to make for company or on days when you're short on time!

Ingredients
  

  • 8 cups uncooked pasta, four assorted pasta shapes of your choice I used bow-ties, rotini, sea shells and pasta ribbons
  • 2 lbs. ground beef
  • 2 medium green peppers chopped, I used one yellow and one orange because we like their flavor better than green
  • 1 large onion diced
  • 2 cups fresh mushrooms sliced
  • 4 29-oz. jars meatless spaghetti sauce any flavor will do
  • 2 large eggs slightly beaten
  • 12 oz. mozzarella cheese shredded

Instructions
 

  • Cook pasta according to package directions.
  • Meanwhile, in a large skillet, cook the beef, peppers, onions and mushrooms over medium heat until meat is no longer pink; drain.
  • Drain pasta and place in a large bowl; stir in beef mixture, spaghetti sauce and eggs.
  • Transfer to two greased 9x13” baking dishes.
  • Sprinkle with cheese.
  • Cover with foil and bake at 350° for 45 minutes or until bubbly.

Notes

NOTE: You can easily halve this recipe for one meal. I put the other casserole in the freezer for later.
