Fried Sweet Potatoes with Apples is savory, delicious and absolutely irresistible comfort food. It's an amazing sweet potato dish that's a great side for any meal, but it's particularly delicious for a weekend, company or holiday breakfast. Every bite will have you salivating. Ingredients
  

  • 1 large sweet potato peeled and cut in small dice
  • 3-5 slices medium-sized onion sliced and separated into rings
  • 1/4 cup red bell pepper diced
  • 1 to 2 large Gala apples peeled and diced or peeled, cored and sliced in rings
  • 1 tsp. chives
  • 1/2 tsp. parsley
  • 1/4 tsp. sage
  • 1/4 tsp. marjoram
  • 1/4 tsp. thyme
  • 1 tsp. sea salt or kosher salt
  • 1/3 tsp. pepper
  • 2 to 3 tbsp. coconut oil or avocado oil

Instructions
 

  • Heat cast iron skillet or other skillet over medium heat.
  • Add coconut oil and melt.
  • Add sweet potatoes, onions, bell pepper, and seasonings.
  • Cover and cook about 20 minutes, turning over potatoes every five minutes to prevent sticking or scorching.
  • Add apple pieces and cook through, about 10-15 minutes more, until potatoes and apples are fork tender.
  • Continue turning over potatoes every five minutes to prevent sticking.
