Ingredients
  

  • 2 extra-large large sweet potatoes peeled and sliced or chunked
  • 1 medium onion diced
  • 1 leek green top removed, sliced or diced
  • 3 slices slices bacon cut in ¾-inch to 1-inch pieces
  • 4-5 peaches sliced
  • Salt and pepper to taste

Instructions
 

  • Place cast iron skillet over medium heat.
  • Add bacon pieces and sauté.
  • Add onion and leek and cook until bacon is done – about 5 minutes.
  • Add sweet potatoes.
  • Sprinkle with salt and pepper.
  • Cover with lid and sauté about 20 minutes until sweet potatoes are almost cooked through.
  • Stir every 5 minutes.
  • Add peaches and replace lid.
  • Cook an additional 5-10 minutes or until peaches are cooked through.
