Fried Sweet Potatoes with Pineapple

Tasty and savory sweet potato dish with veggies and pineapple. Excellent for either breakfast or as a side dish for dinner. This recipe is vegan and gluten free.

Equipment

  • 1 large skillet
  • 1 spatula
  • 1 sharp knife to cut vegetables
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 large sweet potato peeled
  • 1 cup fresh pineapple chunks
  • 1/2 red bell pepper diced
  • 1 medium onion sliced and separated into rings
  • 2 tbsp. coconut oil or avocado oil
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 tsp. Italian seasoning
  • 1 tsp. dried parsley

Instructions
 

  • Peel sweet potato and cut in small chunks.
  • Place oil or butter in a skillet and turn heat to medium (or just under medium).
  • Once oil is hot, add sweet potato, onion, bell pepper, salt, pepper, Italian seasoning and parsley.
  • Cover with lid and sauté for about 15 minutes being sure to turn the potatoes over every five minutes to prevent sticking and from over-browning the potatoes on any one side.
  • Add fresh pineapple and stir to combine.
  • Cover with lid and continue sautéing for another 10-15 minutes, or until sweet potatoes are fork tender.
  • Continue turning potatoes over every five minutes as before.
