Funfetti Cake Batter Cookies

Amazing cookies that begin with a French vanilla cake mix and are loaded with sprinkles. Quick and easy and great for holiday baking or tailgating.

Ingredients
  

  • 18.25 box Duncan Hines French Vanilla Cake Mix
  • 1 tsp. baking powder
  • 2 large eggs
  • 1/3 cup canola oil
  • 1 tsp. McCormick’s real vanilla extract
  • 1 cup Rainbow Jimmies sprinkles NOT nonpareils

Instructions
 

  • Preheat oven to 350°.
  • In a large bowl, mix together the cake mix and baking powder.
  • Add the eggs, oil, vanilla and sprinkles.
  • Scoop with a small cookie scoop and place on a cookie sheet that has been sprayed generously with cooking spray.
  • Bake for 12-13 minutes.
  • Cool.

Notes

NOTE: I decrease the amount of oil slightly in this recipe because my first batch turned out a little flat. This batch turned out a lot better.
NOTE: If you use nonpareils rather than jimmies the color bleeds into the cookie dough and you will have a lavender-colored cookie instead.
