Funfetti Gooey Butter Cookies

Gooey and delicious funfetti cookie with lots of sprinkles! These cookies have cream cheese in the batter making for a really soft cookie. They're ooey, gooey and absolutely heavenly. Perfect for birthdays, tailgating parties, potlucks or whenever you have a sweet tooth craving.

Ingredients
  

  • 8 oz. pkg. cream cheese softened
  • 1 stick unsalted butter at room temperature
  • 1 large egg
  • 1 box Pillsbury Funfetti cake mix
  • 1/2 cup sprinkles (or more if desired)
  • 2/3 cup powdered sugar

Instructions
 

  • Mix cream cheese, butter and egg until well blended.
  • Add cake mix and continue beating until thoroughly mixed.
  • Add sprinkles and stir into cookie mixture.
  • Chill dough one hour.
  • Preheat oven to 350.
  • Roll dough into balls and roll in powdered sugar.
  • Place on cookie sheets that have been only lightly sprayed with cooking spray.
  • Bake about 10-12 minutes.
  • Allow cookies to cool before removing from cookie sheets

Notes

NOTE: Try to get the sprinkles that don't have dark blues, purples and greens. Otherwise, the sprinkles will discolor the cookie dough.
