Gluten Free Banana Bread Pancakes are outstanding! These delightful pancakes are reminiscent of eating a slice of homemade Banana Bread. They're made with bananas, walnuts and cinnamon. Then they're drizzled with maple syrup for a wonderful holiday or special occasion breakfast. Gluten free.
Pour out pancake batter to make 5 or 6-inch pancakes.
Cook on one side until bubbles form on top of pancake and the pancake is almost cooked through.
Turn pancake over and cook another minute or so until done.
Serve with freshly sliced bananas, walnut halves and maple syrup.
Yield: 10 pancakes.
Notes
NOTE: Coconut oil does tend to cause the pancakes to burn more quickly than using butter or avocado oil.NOTE: I DO NOT recommend Pamela's baking and pancake mix for this recipe. In 2014 it was one of the few GF products available. There are many products with better taste, better consistency and that have a one-to-one equivalence (which Pamela's does not have). My personal preference is Cup4Cup.
