This appetizing chicken dish takes about 5 minutes to whip up the marinade. After marinating the chicken overnight, simply toss on the grill and cook until done. 1 jumbo-sized zip-lock bag or two gallon-sized zip-lock bags
1 medium mixing bowl
1 whisk
measuring spoons
grill utensils as needed
Ingredients
10bone-in chicken thighs(skin left on)
3tbsp.olive oil
1tsp.Dijon mustard
2tbsp.red wine vinegar
2tbsp.garlicfinely minced
2tbsp.lemon juice
1tsp.dried oregano
1/4tsp.ground cumin
1tsp.Celtic sea salt
1/2tsp.ground black pepper
Instructions
Combine olive oil, mustard, vinegar, garlic, lemon juice, oregano, cumin, salt and pepper in a small mixing bowl.
Whisk well to combine.
Place chicken thighs in a jumbo-sized zip-lock bag.
Pour marinade over top of the chicken in the bag, scraping the bowl to get all of the marinade into the bag.
Seal the bag and turn over multiple times until the marinade completely covers all of the chicken in the bag.
Refrigerate 20-24 hours, if possible.
To grill chicken: Remove chicken from bag and discard marinade.
Grill over medium-high heat (about 400°) until cooked through—approximately 10-15 minutes per side, or until chicken reaches an internal temperature of 165°.
Remove to platter to serve.
Notes
NOTE: The original recipe called for 1.5 lbs. boneless chicken breasts (approximately 4 chicken breasts), pounded with a mallet.
