Greek Style Marinated Chicken Thighs

Are you looking for an easy, no-fuss chicken recipe for the grill? Look no farther than Greek Style Marinated Chicken Thighs! This appetizing chicken dish takes about 5 minutes to whip up the marinade. After marinating the chicken overnight, simply toss on the grill and cook until done. Equipment

  • 1 gas grill or electric grill, or charcoal grill
  • 1 jumbo-sized zip-lock bag or two gallon-sized zip-lock bags
  • 1 medium mixing bowl
  • 1 whisk
  • measuring spoons
  • grill utensils as needed

Ingredients
  

  • 10 bone-in chicken thighs (skin left on)
  • 3 tbsp. olive oil
  • 1 tsp. Dijon mustard
  • 2 tbsp. red wine vinegar
  • 2 tbsp. garlic finely minced
  • 2 tbsp. lemon juice
  • 1 tsp. dried oregano
  • 1/4 tsp. ground cumin
  • 1 tsp. Celtic sea salt
  • 1/2 tsp. ground black pepper

Instructions
 

  • Combine olive oil, mustard, vinegar, garlic, lemon juice, oregano, cumin, salt and pepper in a small mixing bowl.
  • Whisk well to combine.
  • Place chicken thighs in a jumbo-sized zip-lock bag.
  • Pour marinade over top of the chicken in the bag, scraping the bowl to get all of the marinade into the bag.
  • Seal the bag and turn over multiple times until the marinade completely covers all of the chicken in the bag.
  • Refrigerate 20-24 hours, if possible. 
  • To grill chicken: Remove chicken from bag and discard marinade.
  • Grill over medium-high heat (about 400°) until cooked through—approximately 10-15 minutes per side, or until chicken reaches an internal temperature of 165°. 
  • Remove to platter to serve.

Notes

NOTE: The original recipe called for 1.5 lbs. boneless chicken breasts (approximately 4 chicken breasts), pounded with a mallet.
