Healthy Broccoli Salad

Healthy and cleaner version of Broccoli Salad without mayonnaise. This one uses fresh broccoli, grapes, raisins, sunflower seed kernels, red onion and bacon.

Ingredients
  

SALAD:

  • 3-4 heads broccoli crowns cut into bite size florets
  • 1 cup green grapes sliced in halves
  • 1 cup golden raisins
  • 1 cup sunflower seed kernels
  • 1/2 cup chopped red onion
  • 1/2 lb. bacon fried crisp and broken into small pieces

GREEK YOGURT DRESSING:

  • 1 cup Chobani plain Greek yogurt
  • 1/3 cup sugar
  • 2 tbsp. vinegar

Instructions
 

SALAD:

  • Layer salad ingredients in serving bowl.
  • Refrigerate until ready to serve.
  • Combine salad dressing ingredients and refrigerate until ready to serve.
  • Add Greek Yogurt Dressing just before serving to keep vegetables crisp.

GREEK YOGURT DRESSING:

  • Whisk ingredients together in small mixing bowl.
  • Refrigerate until ready to use.
  • Pour over salad ingredients just before serving.
  • Stir well to combine.

Notes

NOTE: Use honey in the salad dressing if you're trying to avoid sugar.
NOTE: Apple Cider Vinegar also works well in this recipe.
NOTE: You can substitute Peterson's nitrate free, preservative free bacon or turkey bacon in the recipe.
