Cool, refreshing Lemon Blondies are filled with fresh lemon juice and zest in the icing and the blondies for a spectacular treat your family is sure to enjoy.

BLONDIES: 1 1/2 cups UNBLEACHED all-purpose flour 1 1/2 cups sugar 1/2 tsp. salt 2 sticks unsalted butter softened (1 cup) 4 large eggs juice from 1 lemon – about 2 tbsp. zest from 1 lemon – about 2 tsp. LEMON GLAZE: 2 cups powdered sugar 4 tbsp. lemon juice additional lemon zest (I used 2 tsp. in the frosting and extra for the top)
BLONDIES: Mix flour, sugar, and salt.
Add softened butter and whisk or work butter in with a pastry blender.
Mixture will be crumbly.
In another bowl whisk eggs, lemon juice and lemon zest.
Add to the other bowl; mix and beat well with a wooden spoon until smooth.
Pour into a 10x15” glass baking dish that has been sprayed with cooking spray.
Bake at 350° for 30 minutes or until done.
Remove from oven.
Allow blondies to cool before frosting.
LEMON GLAZE: Stir together.
Spread the lemon glaze over the top of the cooled Lemon Blondies.
Sprinkle Lemon Blondies with more lemon zest for garnish, if desired.
NOTE: Your oven may cook these blondies more quickly than mine. Start checking after 20 minutes.
