Lemon Coconut Pecan Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 2 cups sugar
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 2 tbsp. fresh lemon juice
  • 3 tsp. lemon zest
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3 cups UNBLEACHED all-purpose flour bleached flour toughens cookies
  • 1 cup chopped pecans
  • 1 cup coconut

Instructions
 

  • Mix butter, sugar, vanilla, eggs, lemon juice, lemon zest, salt, baking powder, and baking soda with an electric mixer until smooth.
  • Stir in flour, pecans and coconut with a wooden spoon.
  • Bake 10-12 minutes at 350° or until done.
