Loaded Bacon and Cheese Potatoes

Loaded Bacon and Cheese Potatoes are simply spectacular! These scrumptious potatoes are loaded with bacon and cheddar cheese. They're perfect paired with steak, fish, pork chops or grilled chicken. Also great for family, company or holiday dinners. Everyone will come back drooling for seconds of this amazing casserole. Gluten Free.

2 1/2 lbs. Yukon gold potatoes 8 slices thick-cut bacon cooked and crumbled 3 cups extra sharp Cheddar cheese shredded 1 tsp. sea salt or more to taste 1/2 tsp. ground black pepper or more to taste 2 large green onions diced
Wash potatoes and peel.
Place potatoes in microwave and cook until almost done—about 5-6 minutes on high for medium/large potatoes.
Slice potatoes thinly and place one-third of the potatoes in a greased cast iron skillet or 8x12” baking dish.
Sprinkle generously with salt and pepper.
Add one third of the bacon and one third of the cheese.
Repeat layers twice.
Bake at 400° for 20 minutes or until potatoes are fork tender and baked all the way.
Remove from oven and sprinkle with green onions.
NOTE: To grill: place potatoes on double sheets of aluminum foil. Grill over 350-400 degree heat for 10-20 minutes or until potatoes are tender.
