Magic Blueberry Cobbler is magic! This amazing layered dessert features fresh blueberries and a topping with almond and vanilla extracts. Then a glazed sugar is added on top that makes you think of glazed donuts when you eat it. This cobbler is perfect for family, company or holiday dinners since blueberries can be found year round. If you enjoy blueberries, this is a "must make" dessert that will cure your sweet tooth cravings and have you drooling from the first bite.

4 cups fresh blueberries washed 1 stick unsalted butter softened (1/2 cup) 3/4 cup sugar 1 tsp. real vanilla extract 1 tsp. almond extract 3/4 cup half-and-half 1 cup UNBLEACHED all-purpose flour (Bleached flour toughens baked goods) 1/8 tsp. sea salt 1 tsp. baking powder 1/2 cup sugar 1 tbsp. cornstarch 1/4 cup boiling water
Preheat oven to 375°.
Wash blueberries.
Set aside.
Spray a 9x9” glass baking dish with cooking spray.
Arrange blueberries in the bottom of prepared baking dish.
Beat 3/4 cup sugar, butter, almond extract and vanilla in a mixing bowl with an electric mixer until smooth.
Add half-and-half, flour, salt and baking powder and continue mixing with mixer until creamy.
Spread batter evenly over the blueberries in baking dish.
In a small bowl, combine ½ cup sugar and cornstarch.
Sprinkle the sugar mixture evenly over the batter.
Pour the boiling water over top.
Make sure all of the sugar is covered with water and no dry spots remain.
Bake at 375° for 40-45 minutes.
Cool slightly before serving.
Serve with ice cream or non-dairy whipped topping.
NOTE: Because the blueberries bubble up a lot, I recommend putting a cookie sheet underneath the baking dish to collect drips while baking.
