Magic Pear Cobbler is a delightful dessert featuring pears and cinnamon and pairs marvelously with ice cream. Excellent choice for potlucks, backyard barbecues or regular family dinners. Equipment

  • 1 9x9" square baking dish
  • 1 sharp paring knife
  • 1 medium mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 small bowl
  • 1 spoon or fork to mix cinnamon-sugar mixture

Ingredients
  

  • 3 cups pears peeled, sliced (about 2 large pears)
  • 1/2 cup salted butter softened, (1 stick)
  • 3/4 cup granulated sugar
  • 1 tsp. pure vanilla extract
  • 1/2 cup half-and-half
  • 1 cup unbleached all-purpose flour (bleached flour toughens baked goods)
  • 1/8 tsp. sea salt
  • 1 tsp. baking powder
  • 1/3 cup granulated sugar
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1 tbsp. cornstarch
  • 1/4 cup boiling water

Instructions
 

  • Preheat oven to 375°.
  • Peel and slice pears.
  • Set aside.
  • Spray a 9x9” glass baking dish with cooking spray.
  • Arrange pears in the bottom of prepared baking dish.
  • Cream 3/4 cup granulated sugar, butter and vanilla in a mixing bowl with an electric mixer until smooth.
  • Add half-and-half, flour, salt and baking powder and continue mixing with mixer until creamy.
  • Spread batter evenly over the pears in baking dish. 
  • In a small bowl, combine 1/3 cup granulated sugar, cinnamon, nutmeg and cornstarch.
  • Sprinkle the cinnamon-sugar mixture evenly over the batter. 
  • Pour the boiling water over top.
  • Make sure all of the sugar is covered with water and no dry spots remain.
  • Bake at 375° for 40-45 minutes.
  • Cool slightly before serving. 

Notes

NOTE: Canned pears can be substituted. Pat dry before putting in prepared baking dish.
 
NOTE: Great served warm with ice cream or whipped cream.
