Mandarin Orange Almond Salad

Light and refreshing salad with mandarin oranges and sugared almonds. The amped up salad dressing includes orange zest and mandarin oranges for a tasty, tangy dressing.

Ingredients
  

SALAD:

  • 2 bags bags romaine lettuce
  • 1/3 to 1/2 cup red onion diced
  • 29 oz. can mandarin orange segments drained
  • 1 cup sliced almonds
  • 1/4 cup sugar

MANDARIN ORANGE SALAD DRESSING:

  • 1/2 cup avocado oil
  • 2 tbsp. lemon juice
  • 1 tsp. dijon mustard
  • 1/2 to 3/4 tsp. salt
  • 2 tbsp. honey
  • 1 tsp. grated orange peel if using fresh use 1 tablespoon
  • 1/3 to 1/2 cup reserved mandarin orange segments

Instructions
 

SALAD:

  • Cook sugar in a small saucepan over medium-high heat until it melts.
  • Stir in almonds.
  • Remove from heat and spread glazed almonds over waxed paper to cool.
  • Break almonds apart to use for salad.
  • Layer lettuce red onion and mandarin orange segments in large salad bowl.
  • Toss glazed almonds over top.
  • Toss ingredients before serving with dressing.

MANDARIN ORANGE SALAD DRESSING:

  • Blend ingredients in a blender until well mixed.
  • Serve over salad.

Notes

NOTE: While I used walnut oil in this recipe, walnut oil and grapeseed oil are both quite strong in flavor. I recommend avocado oil as a better option.
