20oz. pkg. mint fudge-flavored baking chunksor Andes Mints
Instructions
Spray 50 miniature muffin tins with cooking spray; set aside.
Cream butter, granulated sugar, brown sugar, vanilla, eggs, baking soda and salt with an electric mixer until light and fluffy.
Beat well.
Add flour and mint fudge-flavored baking chips and stir until thoroughly mixed and no crumbs remain.
Scoop dough with a large ¼-cup cookie scoop for regular-sized muffin tins and a small scoop for miniature muffin tins. Place dough in prepared muffin tins.
Bake at 350° for about 14-16 minutes for miniature muffin tins, and 20-25 minutes for regular sized muffin tins.
Rotate muffin tins on oven racks after 8 minutes of baking time.
Cool completely.
Loosen sides gently with a table knife to pop cookie cups out of muffin tins.
Notes
NOTE: If baking in regular-sized muffin tins, bake approximately 20-25 minutes. Yield: about 25 cookie cups.NOTE: The cookies will sink in the middle while cooling.
