Equipment

  • 2-3 miniature muffin pans enough for 50 slots
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 1/4 cup cookie scoop for regular-sized muffin tins
  • 1 small cookie scoop for miniature muffin tins

Ingredients
  

  • 1 cup salted butter softened, (2 sticks)
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 1 1/2 tsp. pure vanilla extract
  • 2 large eggs
  • 2 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 20 oz. pkg. mint fudge-flavored baking chunks or Andes Mints

Instructions
 

  • Spray 50 miniature muffin tins with cooking spray; set aside.
  • Cream butter, granulated sugar, brown sugar, vanilla, eggs, baking soda and salt with an electric mixer until light and fluffy.
  • Beat well.
  • Add flour and mint fudge-flavored baking chips and stir until thoroughly mixed and no crumbs remain.
  • Scoop dough with a large ¼-cup cookie scoop for regular-sized muffin tins and a small scoop for miniature muffin tins. Place dough in prepared muffin tins.
  • Bake at 350° for about 14-16 minutes for miniature muffin tins, and 20-25 minutes for regular sized muffin tins.
  • Rotate muffin tins on oven racks after 8 minutes of baking time.
  • Cool completely. 
  • Loosen sides gently with a table knife to pop cookie cups out of muffin tins.

Notes

NOTE: If baking in regular-sized muffin tins, bake approximately 20-25 minutes. Yield: about 25 cookie cups.
 
NOTE: The cookies will sink in the middle while cooling.
