Nutty Apple Salad is a light and refreshing fruit salad that includes apples, grapes, celery, marshmallows and mixed nuts. It's a terrific company salad for backyard barbecues, grilling out with friends or holiday get-togethers. Gluten free.

  • 1 small mixing bowl
  • 1 sharp knife
  • 1 cutting board
  • 1 small bowl

Ingredients
  

  • 2 cups Honey Crisp apples or Gala apples, cored, and diced (UNPEELED)
  • 2 tbsp. lemon juice or more if needed
  • 2 cups celery diced
  • 1 cup red seedless grapes halved lengthwise
  • 1 cup green seedless grapes halved lengthwise
  • 1 cup marshmallows
  • 1/3 cup evaporated milk cold
  • 1 tbsp. granulated sugar
  • 1/4 tsp. pure vanilla extract
  • 3 tbsp. mayonnaise
  • 3 tbsp. peanut butter optional (I omitted this ingredient)
  • 1/2 cup mixed nuts plus more for decorating the top of the salad, if desired

Instructions
 

  • Before starting recipe, chill evaporated milk and a medium mixing bowl for about one hour.
  • Chop apples and swish in a bowl with lemon juice.
  • Drain on paper towels.
  • In a large bowl, combine apples, celery, grapes and marshmallows.
  • In chilled mixing bowl, beat cold evaporated milk about 5-8 minutes until mixture is thick like pudding.
  • Add sugar and vanilla; then beat in mayonnaise. 
  • (Add peanut butter, if desired).
  • Pour dressing over top of apple mixture.
  • Refrigerate until ready to serve.
  • Stir in nuts just before serving.
  • Decorate with more mixed nuts on top, if desired. 

Notes

NOTE: Peanut butter is included in the original recipe, but I omitted it. Add in, if desired.
