Old-Fashioned Green Beans

These tasty southern-style green beans are delicious as well as being easy. Gluten free.

- 1 1/2 lbs. fresh green beans washed and ends cut off
- 1/3 cup onion diced
- 4-6 slices Applewood-smoked bacon cut in 1-inch slices
- 1/2 tsp. minced garlic from a jar (or 2 cloves freshly minced garlic)
- Salt and pepper to taste
- water as needed
- unsalted butter if desired
In large Dutch oven, fry bacon.
After bacon is almost cooked through on both sides add onion and garlic and cook for 1-2 minutes.
Add green beans and about 3 quarts of water.
Bring to a boil and cook for about 15-30 minutes or until green beans are fork tender and cooked through.
Drain water, season with salt and pepper and a couple of tablespoonfuls of butter, if desired.
NOTE: I did not add any extra butter to this side dish.
