Orange Marmalade Almond Bars

Orange Marmalade Almond Bars are out-of-this-world good! These luscious cookie-type bars have a shortbread crust, an Orange Marmalade filling and topped with sliced almonds. Rich, decadent and amazing. Marvelous for holiday baking.

Crust: 1 ½ cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods) ¾ cup confectioners’ sugar ¾ cup unsalted butter softened or melted, (I prefer the butter half way between melted and softened) Topping: 1 large egg lightly beaten ½ cup granulated sugar 8-10 oz. Orange Marmalade preserves 1 tbsp. unsalted butter softened or melted ½ tsp. vanilla extract ¾ to 1 cup almonds sliced
Crust: In a mixing bowl, stir flour, granulated sugar and butter.
Spread into the bottom and ½ inch up the sides of a 9x13” glass baking dish that has been sprayed well with cooking spray.
Bake at 350° oven for 15-18 minutes or until lightly browned.
Topping: For topping, beat egg, granulated sugar, preserves, butter and vanilla in a mixing bowl with a whisk until smooth.
Spread evenly over hot crust.
Sprinkle with almonds.
Bake at 350° for 15-20 minutes.
Cool.
NOTE: These bars are much easier to cut if you freeze for one hour or refrigerate a couple of hours before serving.
