Overnight Cabbage Slaw is a delightful way to enjoy Cole Slaw without the rich, high calorie mayonnaise-based dressings usually included with Cole Slaw. This lovely oil and vinegar dressing is healthy, low calorie, vegan and gluten free. Since the recipe is made in advance, this salad is wonderful for summer holidays, potlucks, backyard BBQs and grilling out with friends. If you enjoy cabbage, you'll love this easy and delicious side salad.
2/3cupwhite vinegaror apple cider vinegar (if desired)
1/3cupavocado oil
1/4cupgranulated sugar
1tsp.sea salt
1/4tsp.ground black pepper
Instructions
SALAD:
Put cabbage and carrots in food processor and slice or shred.
Add green peppers and chop.
Finely dice the red onion.
Put in a large bowl with a lid.
Add salad dressing and combine.
SALAD DRESSING:
Put in a blender to mix.
Pour over vegetables; stir well with a wooden spoon to combine.
Refrigerate covered 8 hours.
Notes
NOTE: You can use most oils in this recipe (except olive oil which is too strong). But I prefer a healthier oil like avocado oil, rather than canola or vegetable oil.
