Pour ¼ cup olive oil in a 9x13” glass baking dish.
Add poultry seasoning, salt and garlic powder and whisk to combine.
Dredge chicken thighs in mixture making sure that chicken pieces are well coated.
Heat a few tablespoons of olive oil in a large 12” skillet on medium high heat.
Add dredged chicken pieces and sear on each side about 3-4 minutes.
Remove chicken pieces to baking dish.
Pour chicken broth over top of chicken.
Bake at 400° an additional 30-40 minutes or until chicken tests done.
Sprinkle with fresh or dried thyme before serving.
Notes
NOTE: You can also use an oven-proof skillet like a cast-iron pan or enameled cast-iron and use only one dish instead of two.NOTE: I think you can eliminate some of the olive oil by pouring the olive oil with seasonings into your skillet to begin with. There’s still plenty of olive oil left to sear the chicken without adding more.
