Peach Doodles

These lovely cookies combine peaches and cinnamon with macadamia nuts for spectacular flavor and crunchy texture. Great tailgating recipe.

- 2/3 cup unsalted butter
- 1 cup sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 2 1/4 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups peeled peaches finely diced
- 3/4 cup macadamia nuts chopped
In a large bowl, cream butter and sugar, egg, vanilla, cinnamon, baking powder, baking soda and salt until fluffy.
Stir in the flour, peaches and macadamia nuts until well combined.
Mixture will be dry.
Scoop dough with an ice cream scoop and place 3-inches apart onto lightly greased baking sheets.
Bake at 350˚ for 15-20 minutes or until golden brown.
Remove to wire racks to cool.
NOTE: Each oven is different. Your oven may bake these cookies more quickly. Check after 10 minutes.
