These amazing sugar cookies are filled with fresh peaches and rolled in cinnamon sugar. They are so mouthwatering - down to the last crumb! Great for tailgating, potlucks and backyard barbecues.
Cream 1 ½ cups sugar, shortening, eggs, milk, vanilla, cream of tartar, baking soda and salt with an electric mixer until creamy.
Add flour and peaches and stir with a wooden spoon to combine.
Combine remaining ½ cup sugar and cinnamon.
Roll dough into balls and then roll in cinnamon-sugar mixture.
Place on cookie sheets that have been sprayed with cooking spray.
Bake at 350° about 12-15 minutes or until done.
Notes
NOTE: For easier handling, keep hands moist while rolling cookie dough.NOTE: Because the peaches will add a little excess moisture, I’ve increased the flour in this recipe so the cookies don’t flatten out so much while baking.NOTE: I recommend using either Baker’s Joy cooking spray or greasing the pans really well to prevent sticking.
