Peach Snickerdoodles

These amazing sugar cookies are filled with fresh peaches and rolled in cinnamon sugar. They are so mouthwatering - down to the last crumb! Great for tailgating, potlucks and backyard barbecues.

Ingredients
  

  • 2 cups sugar divided use
  • 1 cup Crisco shortening
  • 2 large eggs
  • 2 tbsp. milk or cream
  • 1 tsp. vanilla
  • 3 1/4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 2 tsp. cinnamon
  • 2 cups peaches peeled and finely diced

Instructions
 

  • Cream 1 ½ cups sugar, shortening, eggs, milk, vanilla, cream of tartar, baking soda and salt with an electric mixer until creamy.
  • Add flour and peaches and stir with a wooden spoon to combine.
  • Combine remaining ½ cup sugar and cinnamon.
  • Roll dough into balls and then roll in cinnamon-sugar mixture.
  • Place on cookie sheets that have been sprayed with cooking spray.
  • Bake at 350° about 12-15 minutes or until done.

Notes

NOTE: For easier handling, keep hands moist while rolling cookie dough.
NOTE: Because the peaches will add a little excess moisture, I’ve increased the flour in this recipe so the cookies don’t flatten out so much while baking.
NOTE: I recommend using either Baker’s Joy cooking spray or greasing the pans really well to prevent sticking.
