Pear, Pomegranate and Berry Salad

This luscious salad is festive and beautiful. It's filled with raspberries, blackberries, pomegranate arils, pears, roasted pecans and Swiss cheese. The light Lemon Poppy Seed Dressing is the finishing touch! Gluten free.

Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut fruit
  • 1 small bowl
  • 1 blender

Ingredients
  

SALAD:

  • 11 oz. pkg. spring mix
  • 6 oz. pkg. raspberries
  • 6 oz. pkg. blackberries
  • 1 cup Swiss cheese shredded
  • 1 cup pecans salted and roasted
  • 2 D'Anjou pears cored and sliced (unpeeled)
  • 1 cup pomegranate arils
  • 1/4 cup lemon juice or as needed

LEMON POPPY SEED DRESSING:

  • 3/4 cup avocado oil
  • 1/3 cup lemon juice
  • 1/2 cup honey
  • 1 tsp. pink Himalayan sea salt
  • 1 tsp. dijon mustard
  • 1 tbsp. poppy seeds
  • 1 tbsp. dehydrated onions (or fresh green onions)

Instructions
 

SALAD:

  • Place spring mix in a large salad bowl.
  • Add raspberries, blackberries, Swiss cheese, pecans, and pomegranate arils.
  • Slice pears and swish in a bowl with lemon juice.
  • Drain on paper towels and pat dry.
  • Add pears.
  • Refrigerate until ready to serve.
  • Mix Lemon Poppyseed Dressing.
  • Toss salad.
  • Place on salad plates and drizzle with dressing as desired.

LEMON POPPY SEED DRESSING:

  • Place ingredients in a blender and pulse until thoroughly mixed—about 15-20 seconds.
  • Drizzle over top of individual salad plates when ready to serve.

Notes

NOTE: If you're not using fresh pomegranate (and using pomegranate arils that are already pre-packed from the produce section of the grocery store), you will want to soak the pomegranates in warm water with a few tablespoons of baking soda added. Swish the pomegranate arils in the water and allow to soak about ten minutes. Then rinse well and towel dry before using. This will eliminate any brine taste and smell that the pomegranates are soaked in before packing.
