Peppermint M&M Cookies

These delightful peppermint cookies are filled with white peppermint-flavored M&M's. They make a terrific cookie for Christmas cookie exchanges and holiday baking.

Ingredients
  

  • 1 cup Crisco shortening
  • 1 1/2 cups sugar
  • 2 large eggs
  • 3 cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. peppermint extract
  • 2 8-oz. pkgs. white peppermint-flavored M&M's

Instructions
 

  • Cream shortening, sugar, eggs, baking soda, cream of tartar, peppermint extract and salt, beating well.
  • Add flour and stir with a wooden spoon until well combined.
  • Roll into balls and place on a greased cookie sheet.
  • Press peppermint-flavored M&M’s into the tops and sides of each cookie.
  • Bake 2” apart in a 350° oven for about 15 minutes, or until done.

Notes

NOTE: I pressed one red M&M in the center surrounded by 4 white M&M’s in each cookie (or vice versa). You can also press the M&M's into the cookies randomly, if desired.
NOTE: My cookies took almost 23 minutes to bake!
