Pesto Hummus

Pesto Hummus is an absolutely mouthwatering hummus recipe that's filled with basil pesto, roasted garlic and garbanzo beans. It's a terrific appetizer that's great for tailgating parties, potlucks or backyard barbecues. This quick & easy hummus is low calorie, healthy, clean eating, gluten free and vegan.

Ingredients
  

  • 1 tsp. roasted minced garlic
  • 15 oz. can garbanzo beans rinsed and drained (I recommend mashing with a fork before adding to blender)
  • 2 tbsp. sesame tahini paste ground sesame seeds
  • juice of one lemon
  • 1 tsp. reduced-sodium tamari soy sauce (gluten free)
  • 1 tbsp. olive oil
  • 1 tsp. sea salt or kosher salt
  • 1/2 cup basil pesto I used Classico
  • 2 dashes cayenne pepper

Instructions
 

  • Put garlic, tahini, water, lemon juice, tamari, olive, salt and pesto in blender or food processor.
  • Add garbanzo beans last.
  • Pulse or process until thoroughly mixed.
  • Serve with vegetable dippers.
  • Makes about 2 cups hummus.

Notes

NOTE: This recipe turns out smoother if you mash the garbanzo beans before adding them to your food processor or blender.
 
NOTE: Stir pesto sauce before using.
 
NOTE: I ran the Vitamix at low speed for about 30 seconds. Then I increased power to a medium to high speed for an additional 30-40 seconds or so, until the hummus was smooth and creamy.
