Pina Colada Cookies

These lovely cookies are reminiscent of Pina Coladas as they are filled with pineapple, coconut, candied cherries, almonds and vanilla chips. These festive cookies are great for holiday baking.

1 cup unsalted butter softened 1 cup canola oil 1 cup granulated sugar 1 cup powdered sugar 6 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1/2 tsp. salt 1 tsp. cream of tartar 1 tsp. vanilla 1 tsp. coconut extract 1 tsp. baking soda 2 large eggs beaten 1 cup well-drained crushed pineapple patted dry (one 20-oz. can) 1 cup Nestle’s premiere vanilla baking chips 1 cup chopped candied cherries 1 cup sliced almonds 1 cup coconut
Cream butter, oil and sugars, extracts, eggs, baking soda, cream of tartar and salt until smooth.
Add flour, crushed pineapple, vanilla chips, candied cherries, almonds and coconut.
Stir with a wooden spoon to combine.
Roll dough into balls and place on greased baking sheets.
Bake at 350° for 15-18 minutes.
Rotate cookie sheets on racks every six minutes during baking time.
NOTE: I was baking 5-8 racks of cookies at a time. If you're only baking one or two racks of cookies, your cookies may cook in less time.
