Pineapple Explosion is a spectacular dessert that your family will love. This cake has quadruple the pineapple flavor since it uses a pineapple cake mix and pineapple pie filling in the cake batter. It also uses pineapple tidbits and pineapple extract in the cream cheese icing, making this a dessert to drool over with every bite. If you enjoy pineapple, this lovely cake is perfect for holidays and company since it serves a crowd.

Equipment

  • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 small mixing bowl
  • 1 electric mixer
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

CAKE:

  • 15.25 oz. box Duncan Hines Perfectly Moist Pineapple Supreme Cake Mix
  • 22 oz. can Lucky Leaf Pineapple Pie filling
  • 4 large eggs

CREAM CHEESE ICING:

  • 8 oz. pkg. cream cheese softened
  • 1 tbsp. vanilla extract
  • 1 tsp. pineapple extract
  • 1 cup unsalted butter softened (2 sticks)
  • 4 cups powdered sugar
  • 8 oz. can pineapple tidbits drained really well and patted dry

Instructions
 

CAKE:

  • Mix together cake mix and eggs.
  • Fold in the pie filling.
  • Spread into a greased 11x17” cookie sheet.
  • Bake at 350 degrees for 20-28 minutes, until a toothpick inserted in center comes out clean.
  • Cool completely before adding icing.

CREAM CHEESE ICING:

  • In a small bowl, beat cream cheese, vanilla extract, pineapple extract and butter.
  • Add powdered sugar a cup at a time, beating after each addition.
  • Beat until smooth.
  • Spread over top of cooled cake.
  • Drain pineapple really well and pat dry gently with paper towels.
  • Spread pineapple over top of icing.
  • Refrigerate cake before serving.

Notes

NOTE: My cook took about 30 minutes to bake completely.
