Pork Chops with Caraway Cabbage

Pork Chops with Caraway Cabbage is a tasty and delicious way to enjoy pork chops. This recipe is gluten free and includes a wonderfully flavored tri-color cabbage mixture. It's easy to whip up for weeknight dinners, and if you're a cabbage lover, this is a delightful way to enjoy it. Change out your traditional "meat and potatoes" dinner for a lower calorie and sumptuous "meat and cabbage dinner instead!"

Equipment

  • 1 large 12-inch or 14-inch skillet with lid
  • 1 sharp knife to cut vegetables
  • 1 cutting board
  • measuring cups
  • measuring spoons

Ingredients
  

  • 4-6 pork loin chops (I used 5 boneless pork loin chops)
  • 2 tbsp. avocado oil
  • 1/3 tsp. ground black pepper
  • 1 1/2 cups onion finely chopped
  • 3 tbsp. salted butter
  • 16 oz. bag cabbage shredded, with carrots (or 6 cups shredded cabbage)
  • 2 cloves garlic finely minced
  • 3 tbsp. apple cider vinegar or red wine vinegar
  • 1 tsp. caraway seed
  • 1/2 tsp. sea salt

Instructions
 

  • In a large skillet over high heat, brown the pork chops in avocado oil; drain.
  • Sprinkle chops with pepper; remove chops from skillet and set aside.
  • In the same skillet, sauté onion in butter for 1-2 minutes, or until onion is tender.
  • Add cabbage, garlic, vinegar, caraway seed and salt.
  • Cook, stirring occasionally until the cabbage wilts.
  • This will take approximately 3-5 minutes.
  • Place chops on top of the cabbage.
  • Cover skillet with lid.
  • Simmer over low to medium heat for 15-17 minutes, or until the meat is tender and cooked through. 

Notes

NOTE: Simmer the chops longer if they are not tender enough to suit your taste.
