Butterfinger Surprises are mouthwatering and irresistible. These luscious Peanut Butter Cookies are filled with Butterfinger Bits giving chocolaty, peanut butter and Butterfinger taste in every bite. If you enjoy Butterfinger Bars these cookies should be on your regular baking list. Wow your company or friends by bringing these fantastic cookies to tailgating parties, potlucks, soccer or gym practice or even holiday dinners. Everyone will rush to get a second or third cookie, and you'll probably have to make a second batch.

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 sharp knife to chop Butterfinger bars or baking bits
  • 1 spatula
  • 1 1/4 cup cookie scoop
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup crunchy peanut butter
  • 3/4 cup light brown sugar packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp. real vanilla extract
  • 2 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 20 oz. bag Butterfinger bits (two 10-ounce bags)

Instructions
 

  • Preheat oven to 350 degrees.
  • Cream butter, peanut butter, sugars, eggs and vanilla in a large mixing bowl with an electric mixer until fluffy.
  • Stir flour, baking powder, baking soda and salt together; gradually stir dry ingredients into mixture.
  • Stir in Butterfinger bits until mixture is well mixed and no longer floury.
  • Stir thoroughly; this may take 4-5 minutes.
  • Scoop cookie dough with a large cookie scoop and place on greased baking sheets.
  • Bake 12 to 15 minutes or until lightly browned.
  • Rotate cookies on racks every 6 to 7 minutes of baking time.
  • Cool completely.

Notes

NOTE: When I was baking two racks at a time, my cookies took 21 minutes to bake. When I baked a single rack (and didn’t need to rotate the cookies), the cookies took about 15 minutes to bake. Smaller cookies won’t take so long to bake.
 
NOTE: Stir ingredients really well. These are not muffins! The cookie dough needs to be stirred until every morsel is no longer floury-looking and starts forming large clumps.
