White Chocolate and Cranberry Cookies

White Chocolate Cranberry Cookies are so drool-worthy! These fabulous oatmeal cookies are filled with white chocolate chips and dried cranberries for a marvelous, festive cookie that's great for holiday entertaining. Vanilla chips can also be used in this recipe for excellent effect and taste.

1 cup unsalted butter softened 1 cup brown sugar packed 1 cup granulated sugar 2 large eggs 2 tsp. vanilla extract 3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 1/2 cups rolled oats 2 cups white chocolate chips 1 cup dried cranberries Craisins
In a medium bowl, cream butter and sugars with an electric mixer until smooth.
Stir in eggs and vanilla, then flour, baking powder, baking soda and salt.
Mix well, stir in oats, white chocolate chips and cranberries.
Roll into balls and drop onto lightly sprayed cookie sheet.
Bake at 350° for 12-15 minutes or until done.
Rotate cookie sheets on oven racks every six minutes of baking time.
Makes between 4-5 dozen cookies.
NOTE: My cookies took close to 16 minutes to bake completely.
NOTE: White chocolate chips and vanilla chips each work really well with this recipe.
