Red Velvet Cherry Chocolate Brownies

Spectacular brownie starting with a Red Velvet cake mix and cherry extract and Valentine-colored M&Ms. Then these brownies are iced with a luscious chocolate glaze. Great for holiday baking and Valentine's Day.

Ingredients
  

BROWNIES:

  • 1 box Duncan Hines Red Velvet cake mix
  • 1 stick unsalted butter melted (1/2 cup)
  • 2 large eggs
  • 11.4 oz. bag Valentine-colored M&M’s (see note below)
  • 1/2 tsp. cherry extract

CHOCOLATE ICING:

  • 2 heaping tablespoons cocoa
  • 1 cup powdered sugar
  • 1 tsp. vanilla extract
  • 2 tbsp. water or more, if needed

Instructions
 

BROWNIES:

  • Pour cake mix into mixing bowl.
  • Add butter, eggs, cherry extract and M&Ms.
  • Spray 9x13” baking dish with cooking spray.
  • Spread dough into pan and press in place with fork.
  • Layer will be thin.
  • Bake at 350° for about 20 minutes or until brownies test done with a toothpick.
  • Cool.
  • Drizzle chocolate icing over top.

CHOCOLATE GLAZE:

  • Stir cocoa and powdered sugar together.
  • Add vanilla and water a tablespoon at a time and whisk until you get a good spreading consistency.
  • Transfer mixture to plastic bag.
  • Cut off corner.
  • Pipe chocolate mixture over top of brownies and allow to set and cool completely.

Notes

NOTE: M&M’s used to make a cherry chocolate M&M during the holidays and for Valentine’s day several years ago. Since I was unable to find those this time, I used the Valentine’s Day mix of chocolate M&M’s in red, rose, pink and white colors along with ½ teaspoon cherry extract to achieve the same flavor. If you are able to locate cherry-chocolate M&M's omit the cherry extract in the recipe.
