Rib Eyes with Mushrooms

If you enjoy grilling out with company or friends, Rib Eyes with Mushrooms is a terrific way to serve steak. The recipe is marinated first and flavored with green onions, garlic, balsamic vinegar and thyme. Mushrooms are added just before serving. For those of you who are beef lovers, this is a beef entree your family will love.

Equipment

  • 1 gas grill or electric or charcoal grill
  • 1 large plastic zip-lock bag
  • 1 large mixing bowl
  • 1 sharp knife
  • 1 cutting board
  • measuring cups
  • measuring spoons
  • 1 small bowl or measuring cup to store half of the marinade
  • 1 medium sauce pan

Ingredients
  

  • 16 green onions sliced
  • 4 large garlic cloves finely minced
  • 2 cups beef broth
  • 1/4 cup balsamic vinegar
  • 1 tsp. dried thyme (plus more to sprinkle over the steaks while grilling, if desired)
  • 1/2 tsp. ground black pepper
  • 4 beef rib eye steaks (about 8-ounces each)
  • 2 cups fresh mushrooms sliced
  • additional salt and pepper as needed

Instructions
 

  • In a medium mixing bowl, combine onions, garlic, beef broth, vinegar, thyme and black pepper.
  • Place steaks in a large zip-lock bag.
  • Add half of the marinade.
  • Seal bag and turn over several times to coat the steaks with the marinade.
  • Refrigerate for 2 hours.
  • Cover and refrigerate remaining marinade.
  • Drain and discard marinade from the steaks.
  • Grill steaks for 5-6 minutes on each side, or until meat reaches desired doneness (145° for medium rare, 160° for medium, 170°for well-done.)
  • Meanwhile, place remaining marinade in a small saucepan and bring to a boil over medium heat.
  • Cook and stir for one minute.
  • Add mushrooms and cook until tender – about 5 minutes.
  • Serve over steaks. 

Notes

NOTE: If desired, sprinkle steaks (on each side) with additional salt and pepper and additional thyme before grilling.
