Sauerkraut and Sausage

Sauerkraut and Sausage is an easy main dish recipe that's a great option for busy weeknight dinners. You'll enjoy the savory pork flavors which include both bacon & kielbasa (or Polish sausage). Apples, potatoes, sauerkraut & Caraway Seeds finish off this fantastic entree. The savory & sweet flavors contrast so wonderfully that every bite is irresistible. Gluten free.

6 slices bacon cooked and crumbled 1 small onion chopped 2 medium Gala apples unpeeled , diced4 cups Yukon Gold potatoes peeled and diced (see note below) 1 lb. Polish Sausage or kielbasa (fully cooked )sliced about 1/4-inch thick 32 oz. jar sauerkraut rinsed and drained 1 cup apple juice 1 tbsp. caraway seeds 1/8 tsp. sea salt dash of ground black pepper or to taste 1/2 tsp. dried parsley
In a skillet, fry bacon strips until crisp cooked but not scorched!
Drain bacon on paper towels.
When cool, crumble bacon and set aside for garnish.
Do not drain grease.
Meanwhile, while bacon is frying, chop apples and onion, and peel and dice potatoes; set aside.
In a large skillet sauté onion in bacon grease until tender.
Rinse sauerkraut well in colander; set aside.
Add sauerkraut, sausage, potatoes, apple juice and apple.
Sprinkle with caraway seed, salt and pepper and parsley.
Stir to combine.
Simmer for 35 minutes, stirring occasionally.
Garnish with bacon before serving.
NOTE: I omitted the brown sugar and flour in the original recipe.
NOTE: I used Yukon gold potatoes, but any kind will work.
