Sausage and Gravy Breakfast Skillet

Sausage and Gravy Breakfast Skillet is out of this world. This sumptuous breakfast skillet includes hash browns, Monterey Jack and Cheddar cheese topped with sausage and sausage gravy. Then all of that is topped with two sunny-side-up eggs. If you enjoy southern-style breakfasts, this one can't be beat. Every bite is irresistible. This stellar recipe is marvelous for weekend, company or holiday breakfasts.

Ingredients
  

  • 2 cups frozen hash browns thawed
  • 3 tbsp. salted butter divided use
  • Salt and pepper to taste
  • 1/8 tsp. dried parsley divided use
  • 1/8 tsp. dried thyme divided use
  • 1/8 tsp. dried rosemary divided use
  • 1/2 cup monterey jack cheese shredded
  • 1/2 cup cheddar cheese shredded
  • 1 cup mild bulk pork sausage cooked and drained
  • 1 cup prepared sausage gravy mix or country gravy mix or pepper gravy mix
  • 2 large eggs

Instructions
 

  • Melt 2 tbsp. butter in a non-stick skillet.
  • Sauté hash browns in butter.
  • Season with salt, pepper, and about 2/3 of the parsley, rosemary and thyme.
  • Cook until bottom is well browned.
  • Turn hash browns over and cook remaining side.
  • Transfer hash browns to an ovenproof 8-inch skillet or a glass 8-inch round baking dish.
  • Meanwhile, in a separate skillet, fry two eggs (sunny-side up) in a tablespoon of butter until cooked.
  • Season with remaining parsley, rosemary and thyme as well as salt and pepper.
  • Set aside and keep warm.
  • To skillet with hash browns, remove from heat.
  • Sprinkle cheeses over top of hash browns.
  • Then spread cooked sausage over top.
  • Pour prepared sausage gravy or pepper gravy over top of sausage.
  • Place in a pre-heated 350° oven for 5-7 minutes to heat; or place in microwave in glass dish for about one minute.
  • Remove from oven or microwave.
  • Slide eggs, sunny-side up over top of sausage gravy.
  • Serve immediately.

Notes

NOTE: It is best to use non-stick skillets for this recipe.
NOTE: I use about 2 tbsp. butter to sauté the hash browns and another tablespoon to fry the eggs.
NOTE: the sausage is pre-cooked for this recipe. Plan accordingly.
NOTE: To prepare gravy mix blend: Bring 1 ½ cups water to a rolling boil. Combine gravy mix with ½ cup cold water. Add to boiling water and whisk until mixture has thickened. Remove from heat and use in recipe as directed. You will not use all of the gravy for this recipe).
NOTE: You may find it easier to pre-cook the sausage, sausage gravy and potatoes, before starting this recipe.
NOTE: If you want to reduce calories, you can use 1 cup of the hash browns, 1/4 cup each of the cheeses and 1/3 cup of the sausage.
