Six Cup Salad

Wonderful fruit salad recipe with marshmallows, coconut, oranges, pineapple, and grapes. This recipe is gluten free.

Ingredients
  

  • 1 cup sour cream or Chobani Greek yogurt
  • 1 cup cottage cheese
  • 1 cup miniature marshmallows
  • 1 cup coconut
  • 1 cup mandarin orange segments drained
  • 1 cup pineapple chunks drained
  • 2-3 tbsp. powdered sugar
  • 1 cup grapes halved

Instructions
 

  • Mix sour cream cottage cheese and powdered sugar.
  • Add marshmallows, coconut, well-drained pineapple and orange segments.
  • Add grapes and, if desired, a cup of peaches, pears or apples (dipped in lemon juice).
  • Stir to combine.
  • Refrigerate until ready to serve.

Notes

NOTE: This is also good with canned peaches or pears, diced, or apples and bananas dipped in lemon juice. (If you have to dip any of the fruit in lemon juice, you may have to add a little more sugar).
NOTE: This recipe does not work well with many berries because they turn the salad purple or are too fragile to be stirred into the salad.
