Equipment

  • 1 large serving bowl
  • 1 medium mixing bowl
  • 1 pair tongs to toss salad
  • 1 sharp knife to dice apple and mince onion
  • 1 cutting board
  • measuring cups
  • measuring spoons
  • 1 wooden spoon
  • 1 whisk

Ingredients

  • 2 tbsp. unsweetened applesauce
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. avocado oil
  • 1/4 tsp. Stevia powder or sugar
  • 1 cup apple diced, unpeeled (I used one large Envy apple which yielded 2 cups diced apple)
  • 1/4 cup Vidalia onion finely minced (or any sweet onion)
  • 1/4 cup raisins
  • 2 cups Romain Lettuce torn
  • 2 cups spinach de-stemmed (see note below)

Instructions

  • In a small bowl, combine the applesauce, apple cider vinegar, oil and Stevia powder (or sugar).
  • Mix well.
  • Add apple, onion and raisins; toss lightly to coat fruit.
  • Cover and allow ingredients to stand for 10 minutes.
  • Just before serving, combine spinach and romaine lettuce in a large salad bowl; add apple mixture and toss well.
  • Serve immediately.

Notes

NOTE: I prefer changing the ratio of spinach and Romaine lettuce to having twice as much Romaine lettuce as Spinach. (4 cups Romaine, 2 cups fresh spinach). The salad ingredients seem to blend better with these amounts.
