Spinach Apple Salad is heavenly. This lovely Tossed Salad includes both spinach and Romaine lettuces, apples, raisins and Vidalia onions in a delicious applesauce Salad Dressing. It can be whipped up really quickly, making it perfect for weeknight dinners when you need a meal ready in a jiffy. It pairs wonderfully with any type of main dish and is healthy, low calorie, gluten free, sugar free and vegan.
1cupapplediced, unpeeled (I used one large Envy apple which yielded 2 cups diced apple)
1/4cupVidalia onionfinely minced (or any sweet onion)
1/4cupraisins
2cupsRomain Lettucetorn
2cupsspinachde-stemmed (see note below)
Instructions
In a small bowl, combine the applesauce, apple cider vinegar, oil and Stevia powder (or sugar).
Mix well.
Add apple, onion and raisins; toss lightly to coat fruit.
Cover and allow ingredients to stand for 10 minutes.
Just before serving, combine spinach and romaine lettuce in a large salad bowl; add apple mixture and toss well.
Serve immediately.
Notes
NOTE: I prefer changing the ratio of spinach and Romaine lettuce to having twice as much Romaine lettuce as Spinach. (4 cups Romaine, 2 cups fresh spinach). The salad ingredients seem to blend better with these amounts.
