Spring Mix with Berries, Glazed Pecans and Feta Cheese

This festive and beautiful salad is filled with fruit, glazed pecans and feta cheese. This one has strawberries, blackberries, raspberries and blueberries. It's terrific for company or holiday dinners like Easter, Mother's Day or Father's Day. Gluten free.

Ingredients
  

  • 10 oz. container spring mix or butter bliss lettuce
  • 6 oz. bag baby spinach stems removed
  • 1 cucumber unpeeled
  • 2 slices red onion thinly sliced and separated into rings
  • 16 oz. container strawberries washed and sliced
  • 6 oz. ctn. blueberries
  • 6 oz. ctn. firm raspberries rinse lightly to preserve texture
  • 6 oz. ctn. blackberries
  • 8 oz. pkg. feta cheese crumbled
  • 1 1/2 cups glazed pecans or walnuts
  • poppy seed dressing as desired

Instructions
 

  • Layer in above order omitting dressing.
  • Refrigerate until ready to serve.
  • Toss to serve, add dressing individually as desired.

Notes

NOTE: This is a sweet salad that I usually serve with a homemade poppyseed dressing. You can use cashews or almonds if you prefer a salad that is not quite so sweet.
