Strawberry Shortcake Overnight Oatmeal

Strawberry Shortcake Overnight Oatmeal will get your engines revving in the morning! This healthy and delicious breakfast is made in the slow cooker overnight. It uses steel-cut oats which turn out extra smooth and creamy when cooked slowly. Adding a dose of Strawberry Shortcake flavor amps up the flavors wonderfully. These oats are vegan, gluten free and sugar free so even those on special diets can enjoy them!

Equipment

  • 1 large crock pot
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 sharp knife to cut strawberries

Ingredients
  

  • 24 oz. pkg. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
  • 48 oz. container Califia Farms oat milk
  • 3 cups water
  • 1 tbsp. vanilla extract
  • 1 tsp. pink Himalayan sea salt
  • 4 cups strawberries diced, fresh

Instructions
 

  • Spray a large 6 or 7-quart crockpot very generously with cooking spray.
  • Combine oats, oat milk, water, sea salt, vanilla and strawberries and spread into crock pot.
  • Cook on low heat overnight for approximately 5 hours.
  • Serve garnished with fresh strawberries slices, if desired.

Notes

NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.
 
NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.
 
NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 5 hours in my slowest crockpot.
 
NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Five hours is really all you need.
 
NOTE: This recipe is easiest if you have a slow cooker with a programmable timer. Set the end time for when you want to serve breakfast.
 
NOTE: Oat Milk can be purchased at Walmart and other grocery stores. You will have to go early to Walmart to purchase it because they sell out very quickly.
 
NOTE: This is NOT a very sweet oatmeal on it's own. You will need to add fresh strawberries or even sliced banana on top of each serving to make the oatmeal sweet enough without sugar. If you don't need a sugar-free recipe, I recommend adding 3/4 cup brown sugar (packed) when cooking the oatmeal in the crockpot. That will provide plenty of sweetness for each serving.
 
NOTE: You can also use Stevia extract or Monk Fruit sugar if you want to keep the recipe sugar-free and contain less calories.
