1/4cupchili sauce
2largehard-cooked eggschopped
1green oniondiced
1/3cupcelerychopped
4 1/2tsp.onionfinely chopped
1tsp.paprika
1/2tsp.salt
SALAD:
2bagsbutter bliss lettuce
1cupgrape tomatoes
1cucumbersliced or quartered and sliced
1/3cupmatchsticks carrots
1smallzucchinisliced or diced
1smallyellow squashsliced or diced
2oz.miniature pepperoni
1cupparmesan cheesefreshly grated
Instructions
THOUSAND ISLAND SALAD DRESSING:
In a bowl, combine all ingredients; mix well.
Cover and refrigerate until serving.
Serve over salad greens.
Yield: 1 ½ cups.
SALAD:
Layer in order, toss, and serve with dressing.
Notes
NOTE: You can use either Hellmann's mayonnaise or Miracle Whip, or a combination of the two (which is what I used).Other options: 1 yellow pepper, diced, ½ cup shredded cabbage.
