Tomato Feta Salad

Tomato Feta Salad is a delightful side dish that uses four different kinds of grape tomatoes. Along with fresh basil, Vidalia Onions and Feta Cheese, it has a simple balsamic glaze that provides a robust, tasty flavor. This is a marvelous salad for Backyard Barbecues, potlucks or family dinners. It's healthy, low calorie and gluten free.

2 tbsp. balsamic vinegar 1 tbsp. fresh basil minced (or more, if desired) 1/2 tsp. Celtic sea salt (I used Baja Gold) 1/2 cup Vidalia onion coarsely chopped (or sweet onion) 5 oz. Angel Sweet grape tomatoes halved 3/4 lb. grape tomato medley halved (I used constellation grape tomatoes that included, red, orange, yellow and dark colored tomatoes) 2 tbsp. olive oil 1/2 cup Feta cheese crumbled
In a bowl, combine balsamic vinegar, fresh basil and salt.
Stir well.
Add onion and toss well to coat.
Allow mixture to stand for 5 minutes.
Add tomatoes, olive oil and Feta cheese.
Toss again to coat well.
Serve salad with a slotted spoon.
NOTE: If you are unable to find different colored grape or cherry tomatoes, regular grape tomatoes will also work.
