Tossed Guacamole Salad is the ultimate in comfort food. This salad includes guacamole, bacon and Feta cheese in a delicious homemade Honey Vinaigrette. Perfect Tex-Mex salad for special occasions like Mother's Day, Father's Day or company dinners. Gluten free.

SALAD: 2 bags torn lettuce greens (I used a Romaine mix and butter bliss) 1 large tomato diced, or 1 cup grape tomatoes 1/4 to 1/3 cup red onion diced finely, or sliced and separated into rings 6 bacon strips cooked and crumbled 2 large ripe avocados peeled and cubed 1 cup feta cheese 1/2 lemon 1/4 cup fresh cilantro torn (or more if desired) HONEY VINAIGRETTE: 1/3 cup avocado oil 2 tbsp. apple cider vinegar 1/4 cup honey 1/2 tsp. sea salt 1/8 tsp. black pepper 2 to 3 drops hot pepper sauce or, as desired
SALAD: In a large bowl, place avocados.
Drizzle fresh lemon juice over top.
Add diced tomatoes, red onion, Feta cheese, cilantro and bacon pieces.
Pour salad dressing ingredients into the bowl with tomatoes and avocados.
Toss gently to combine.
Place lettuce greens in a salad bowl.
Place avocado mixture over top of greens.
Toss ingredients to coat well.
Serve immediately.
HONEY VINAIGRETTE: In a blender, combine avocado oil, honey, vinegar, salt, pepper and hot pepper sauce.
Pulse until smooth.
NOTE: You can also refrigerate the lettuce separately from the guacamole mixture for up to four hours. Then combine ingredients to serve.
