White Chocolate Cherry Coconut Cookies

White Chocolate Cherry Coconut Cookies are the ultimate in holiday baking. These festive cookies are filled with white chocolate chips, dried cherries and coconut. They are absolutely scrumptious to the taste buds and will have you drooling from the first bite. If you enjoy cherries, white chocolate and coconut, you'll simply rave over these delectable cookies.

1 cup unsalted butter softened 1 cup white sugar 1 cup brown sugar packed 2 large eggs 2 tsp. vanilla extract 3 1/2 to 4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods 1 tsp. baking soda 2 tsp. hot water 1/2 tsp. salt 2 cups white chocolate chips 1 cup coconut 6 oz. dried cherries
Preheat oven to 350°.
Dissolve baking soda in hot water.
Set aside.
Cream together the butter, white sugar, brown sugar, eggs, vanilla, salt and baking soda mixture with an electric mixer.
Stir in flour, white chocolate chips, dried cherries and coconut with a wooden spoon.
Roll into balls and place on cookie sheets that have been sprayed with cooking spray.
Bake 15-17 minutes at 350° or until done.
NOTE: I accidentally over-softened the butter so I ended up using extra flour to compensate. I recommend using about 3 1/2 cups of flour normally.
