Yellow Squash Casserole is outstanding. This amazing side dish recipe uses yellow squash, green onions, Italian-style bread crumbs and Italian seasoning to jazz it up. We sprinkle the top with Parmesan cheese amping up the flavors even more. This is terrific for a company or holiday side dish like Thanksgiving, Christmas or Easter.
1/2cupItalian style bread crumbs(you can also substitute gluten free bread crumbs)
1/2cupgreen onionssliced or sweet onions, chopped
2largeeggs
1/2cupunsalted buttermelted (1 stick)
1tbsp.granulated sugar
1tsp.salt
1/2tsp.ground black pepper
1 1/2cupsParmesan cheesegrated
1tbsp.Italian seasoning
1/4cupbread crumbsfor garnish
1/3cupParmesan cheesefor garnish
Instructions
Place a large sauce pan over high heat.
Fill pan about two-thirds full of water.
Cut up squash and add to sauce pan
Boil under tender.
Drain in colander and mash squash with a potato masher.
Transfer squash back to the large sauce pan.
Add half cup bread crumbs and all the remaining ingredients except half the butter and Parmesan cheese to sprinkle on top.
Pour into greased 9x13” baking dish.
Pour remaining butter on top.
Sprinkle with remaining 1/4 cup bread crumbs, then the Parmesan cheese.
Bake at 375° for one hour.
Notes
NOTE: Corey doesn’t like onions so she always substituted 1 tbsp. dehydrated onions for the onions in the recipe. Although I prefer to use fresh onions of any kind.NOTE: 4C brand makes gluten free bread crumbs and Italian style gluten free bread crumbs. I purchase them at Walmart.
