Blueberry Walnut Overnight Oatmeal

Teresa Ambra

Gluten Free Living – 2022

We loved how this Blueberry Walnut Overnight Oatmeal turned out. I made this one with brown sugar so it’s not sugar free, but it is one delicious homemade oatmeal recipe using steel-cut oats. I added walnuts and vanilla for flavoring. I used my typical Oat Milk from Califia Farms too which makes the oatmeal so thick and creamy.

Back in September I made several recipes that I’m finally getting a chance to post up. This oatmeal was one of them. I recommend a couple of things: Use a slow cooker with a programmable timer. Even in my slowest crockpot, this recipe only takes 5 hours. So unless you’re late to bed and early to rise, you’ll overcook this oatmeal if you’re not careful. I usually make it during the day and then put it in containers in the refrigerator so my husband can heat it up for breakfast during the week. Each batch makes 12 servings, so it goes a long way for only two of us.

Blueberry Walnut Overnight Oatmeal is great with extra blueberries and walnuts tossed over the top of each serving. If you really need a sugar-free recipe, then toss some sliced banana on individual servings as well. That will make the oatmeal sweet enough if you need less sugar.

I’ve been making a lot of steel-cut oatmeal for my husband for breakfast to lower his cholesterol. It has definitely worked. If you’re looking for a wonderful breakfast recipe for holidays, weekends or regular breakfast menus, this one is healthy, vegan and gluten free. It’s a win-win for even the pickiest eater. 🙂

Blueberry Walnut Overnight Oatmeal is a dream to whip up for holiday, company or weekend breakfasts. It reheats easily for quick wholesome breakfast meals during the week. This easy vegan, gluten free, slow cooker recipe is great cooked in a programmable crock pot since it only takes 5 hours to make. This healthy breakfast option uses steel-cut oats and is one of the most delicious ways to enjoy oatmeal ever!

Equipment

  • 1 large crock pot
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 nut chopper if nuts are not previously chopped

Ingredients

  • 24 oz. pkg. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
  • 48 oz. container Califia Farms oat milk or almond milk
  • 3/4 cup light brown sugar packed
  • 3 cups water
  • 1 tsp. sea salt
  • 1 tbsp. vanilla extract
  • 2 cups walnuts chopped (measure after chopping)
  • 2 rounded cups fresh blueberries washed (about 1 1/4 dry pints)
  • 1/2 cup walnuts chopped, (sprinkled over top of individual servings, if desired) measure after chopping
  • 1 cup blueberries sprinkled over top of individual servings, if desired

Instructions

  • Spray a large 6 or 7-quart crockpot very generously with cooking spray.
  • Combine first seven ingredients and spread into crock pot.
  • Cook on low overnight for approximately 5 hours.
  • Serve garnished with fresh blueberries and a sprinkle of chopped walnuts, if desired.

Notes

NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.

NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.

NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 5 hours in my slowest crockpot.

NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Five hours is really all you need.

NOTE: This recipe is easiest if you have a slow cooker with a programmable timer. Set the end time for when you want to serve breakfast.

NOTE: Oat Milk can be purchased at Walmart and other grocery stores. You will have to go early to Walmart to purchase it because they sell out very quickly.

NOTE: If you want the recipe sugarless, omit the brown sugar in the recipe. Use Stevia Extract or Monk Fruit sugar on individual servings, as desired. (This will also reduce the calories considerably).

This looks like the perfect solution for my rushed mornings. I love that you used walnuts for the crunch factor—I sometimes add a pinch of cinnamon to mine, which pairs wonderfully with the blueberries. Thanks for the easy, nutritious idea!

This Blueberry Walnut Overnight Oatmeal looks like the perfect solution for busy mornings! I’ve been experimenting with steel-cut oats lately, but I often struggle to get that thick, creamy texture you mentioned. Using Oat Milk from Califia Farms seems like a great tip to achieve that consistency. The combination of walnuts for crunch and fresh blueberries for sweetness sounds absolutely divine. I love that this is a gluten-free option as well. Your food photography is stunning and really makes the ingredients pop. Seeing high-quality shots like these really inspires me to get back into the kitchen and try this out tonight! It’s so much better to have breakfast ready to go when you wake up.

I wasn’t sure about steel-cut oats in the crockpot at first, but after about five hours it came out thick and creamy just like described, and the extra blueberries on top made it taste so fresh
